TOMATO OBSESSED!

I’ll be honest, I have not always loved tomatoes…

I like them in spaghetti sauce and salsa etc. But raw on a sandwich or in a salad? No way. But I want to like them, every summer I try them and manage to do a little Caprese Salad or some of my Mom’s Gazpacho. But there must be something with this years crop, because I am loving them!!  Thinly sliced on toast with some mayo and salt & pepper and basil…sooo good.

I also found a delicious pasta recipe from the Barefoot Contessa that involves marinating tomatoes and tossing them raw in the pasta. Had it for dinner last night, also…soooo good. HERE is the recipe.

While I’m at it..here is my Mom’s Gazpacho Recipe

Ingredients

1/2 cup soft bread crumbs (i make myself in my mini food processor)             

1 small clove of Garlic

1/2 cup water                                                                                                                           

 1 TBSP Chopped Onion

1 tsp salt                                                                                                                                     

2 TBSP diced canned Pimento

2 TBSP Olive Oil                                                                                                                        2 cups V8 Juice

3 TBSP Red Wine Vinegar

1/3 cup diced cucumber, 1/3 cup diced celery. 1/3 cup diced green pepper, 1/3 cup diced peeled tomato

Method

Combine all of the ingredients that are BOLDED and puree in food processor or blender. Let sit while you are dicing the rest of the vegetables.

Combine diced vegetables and liquid. Stir and chill.

Serve with a dollop of sour cream and some chives.
