I borrowed a couple of Vegan Cookbooks from a friend and have been looking thru those. I haven&#8217;t done a full vegan grocery shop yet, I have to stock up on nuts and legumes. But, I spent some time yesterday roasting butternut squash (seeds too), zucchini, onion, brussel sprouts and garlic and made a warm quinoa, lentil and roasted vegetable salad with fresh turmeric, ginger and a little lemon juice and olive oil. YUMMY! I had a green salad on the side.<\/p>\n<p>I have the other half of my squash to make a coconut thai curry soup with tonight.<\/p>\n<p>How do I feel so far?
