Cooking two meals, one for me and one for the rest of my family.<\/p>\n<p>My husband is actually happy to eat Vegan with me here and there and my whole family ate vegetarian on Friday night!<\/p>\n<p>Recipe: Chick Pea Salad (Like Tuna Salad but with Chick peas)<\/p>\n<p>Drain and rinse a can of chick peas.<\/p>\n<p>Put the chick peas in a bowl and mash. Add chopped celery, green onions and parsley. Add a heaping Tablespoon of Vegan Mayo and a teaspoon of Dijon Mustard, salt and pepper to taste. Mix well and serve on toast with lettuce.<\/p>\n<p>So Good.
