{"id":16996,"date":"2022-01-11T15:13:34","date_gmt":"2022-01-11T20:13:34","guid":{"rendered":"https:\/\/briwebapp.net\/cfgxfm\/?p=16996"},"modified":"2022-01-11T15:13:34","modified_gmt":"2022-01-11T20:13:34","slug":"the-view-from-here-im-basically-a-chef-now","status":"publish","type":"post","link":"https:\/\/briwebapp.net\/cfgxfm\/blogs\/afternoons\/2022\/01\/the-view-from-here-im-basically-a-chef-now\/","title":{"rendered":"The View From Here &#8211; I&#8217;m Basically A Chef Now"},"content":{"rendered":"<p>OK.\u00a0 Not really.\u00a0 But you guys, sometimes I make something and it tastes so good I have to tell EVERYONE whether they want to know it or not.\u00a0 (smile)<\/p>\n<p>I&#8217;m really not great at making things in the kitchen.\u00a0 I&#8217;m a really good ingredient assembler, but I am far from creative when it comes to food.\u00a0 Sarah Woodley just seems to know what ingredients go together and is really good at putting things together and having them not only be edible, but taste good.\u00a0 I can&#8217;t do that.<\/p>\n<p>So when a miracle happens in the kitchen I get excited.<\/p>\n<p>Right now we are in the middle of a kitchen renovation.\u00a0 We are waiting on cabinets, and a countertop.\u00a0 Basically our kitchen contents are in boxes scattered around our living room.\u00a0 We have no sink or running water in the kitchen.\u00a0 So I&#8217;ve been forced to get creative with meals.\u00a0 Trying to save dishes, and find things that are a bit easier to make.<\/p>\n<p>Some leftover black beans in the fridge had me looking for recipes to use them up and I found what looked like a pretty easy recipe.\u00a0 Black bean tortilla soup.\u00a0 Chicken stock.\u00a0 Black beans. Salsa. Shredded cheese. Tortilla chips.\u00a0 Boom.\u00a0 Easy peasy.<\/p>\n<p>So I put them together.\u00a0 Added a cup of corn kernels for fun.\u00a0 \u00a0And to be honest, I wasn&#8217;t expected anything amazing &#8211; but when I poured a bowl of soup for my lunch for the first time yesterday, I had to say, it was so much tastier than I expected. And using the spicy salsa was a good idea.\u00a0 Lots of flavour!<\/p>\n<p>Super easy.\u00a0 Super cheap to make.\u00a0 And a one pot clean up.\u00a0 PERFECTION.<\/p>\n<p>Sometimes you have to celebrate those small victories because it&#8217;s those little moments that bring you the most joy.\u00a0 My kids will never eat it.\u00a0 I guarantee you that.\u00a0 But I&#8217;ve gotten used to their pickiness.\u00a0 Especially when it comes to &#8220;healthier&#8221; food options in our house.\u00a0 That&#8217;s okay.\u00a0 More for me to enjoy.\u00a0 (smile)<\/p>\n<p>Seriously.\u00a0 One of those moments, you just stand back and appreciate that you actually did something you&#8217;re proud of.\u00a0 Gordon Ramsey would be proud.\u00a0 Somebody tell him.\u00a0 But not about the paper bowl I served it in.\u00a0 Presentation was a bit lacking.
