Dave McAdams and his wife Tina opened a coffee shop in Oak Grove, Oregon about a year ago.  But unfortunately, Dave was diagnosed with terminal cancer and is now in hospice.  So, the owner of a competing coffee shop down the street closed down for a day, and worked at their shop instead to help raise money to cover his medical bills.  Her name is Pixie Adams, and she told her own customers to start going there to help them out.

You might have heard about the North American French fry shortage. If that wasn’t bad enough, now there’s THIS: A global coffee shortage could be just around the corner. A new report by the International Coffee Organization found that coffee consumption is expected to outpace production soon. There could be a deficit of about 502,000 bags of coffee in the production year.

GOOD NEWS

43-year-old Latonya Young lives in Atlanta.  She works as a hairdresser by day and drives for Uber at night.  But she’s always wanted to be a lawyer.

Back when she was 16, she got pregnant and had to drop out of high school.  But she eventually got her diploma and enrolled at Georgia State.

Unfortunately, she got behind on her tuition by about $700 and couldn’t take more classes until she paid it.  But every time she saved up some money, her kids needed something.  So she just kept putting it off.

Then recently, she picked up a passenger named Kevin Esch, and was talking to him about it.  And a few days later, she got a call from the school to let her know her bill had been paid in FULL.

Kevin says it felt like a blessing to meet her and be able to help her out.  And once she found out he paid her bill, she felt like she owed it to him to get her degree.  So she did.

She recently got her associate’s in criminal justice, and Kevin showed up to her graduation a few weeks ago. Now she’s heading back to school this month to keep going for her bachelor’s, and eventually, her law degree.

THIS DIET – TRY IT!
For the third year in a row, the Mediterranean diet has been named #1 in US News and World Report’s ranking of best diets. Each year, a number of diets are ranked on balance, maintainability, palatability, family-friendliness, sustainability and healthfulness. And once again, the Mediterranean diet has checked all the boxes.

The Mediterranean diet, which emphasizes simple, plant-based cooking, also captured first place in best diet for healthy eating, easiest diet to follow, best plant-based diet and best diet for diabetes.

And its little wonder it has come out on top again. Meals from the sunny Mediterranean have been linked to stronger bones, a healthier heart, a lower risk of dementia and breast cancer, and longer life, along with a reduced risk for diabetes and high blood pressure.

CURE OF THE COLD?

Instagram users have been left horrified by a fermented cold-busting remedy. The bizarre concoction, which was shared on US-based BuzzFeed Tasty’s Instagram page, garnered hundreds of comments from disgusted users – who were not impressed at the variety of ingredients.

One user claimed they would ‘rather die of a cold’ than drink the mixture, while another insisted that you would ‘stink for a whole week’ if you consumed the liquid.

The remedy requires one whole piece of ginger, which is quartered, peeled and minced followed by 12 cloves of minced garlic and four cinnamon sticks. Then comes two halved jalapeno and habanero peppers, two sprigs of rosemary, one orange, two lemons, one apple, one onion, two tablespoons of honey and one cup of apple cider vinegar.

The ingredients are all added to a large glass jar where they are squashed into place with a wooden spoon. It needs to be stored in a cool dry place where it will ferment for three to six weeks, depending on how spicy you want the remedy to be.

The mixture is then strained through a sieve and the juice can be stored in a smaller jar in the fridge for one month. Once the remedy is fermented, a small amount can be added to either soda water, to drink cold, or consumed as a hot tea with boiling water.

A NEW BIT OF INFO:
Tim Hortons is a part of many Canadians’ (and many in other countries!) daily routine, but now there’s a whole new way to make Timmy’s a part of your morning. The restaurant/coffee chain has just introduced “Tim Hortons Timbit cereal”. We were tipped off in the fall when someone tweeted a pic of a Tim Hortons cereal box with the caption: “This is happening, folks.” The Canadian icon has partnered with Post Foods Canada to come up with two flavors: ‘Chocolate Glazed’ and ‘Birthday Cake’, both named after popular ‘Timbit’ flavors.

They are already available at some grocery stores.

JASON ALDEAN KEEPS HIS MUSIC BELIEVABLE

When it comes to chasing trends in country music, Jason Aldean is definitely not a follower. Since day one, he has recorded and performed the music that fits him comfortably. Jason tells us: [“I’ve just always been comfortable in what we do and the kind of music that I make. It’s country and rock and a little blues and some R&B. I don’t know. I’ve always been comfortable and thought that what we did was cool and it was what made me think that it sound good, you know? And I think you can always change it up a little bit here and there but I always thought like the core sound of what we do and the types of songs that we cut, you know, it’s kind of what got us here and it’s because it was believable and authentic to me and where I’m from and I think that’s why it’s always connected with people.”]

He will join his good friend Luke Bryan for the very first time at Luke’s Crash My Playa event in Cancun, Mexico beginning on Jan. 22nd. The event is sold out.

RASCAL FLATTS PLOT ‘FAREWELL TOUR’

After 20 years together, Rascal Flatts has announced their Farewell: Life Is A Highway Tour, kicking off on June 11th in Indianapolis.

The Farewell Tour celebrates the group’s 20th anniversary, something that Gary and Joe Don Rooney tell us they credit to their hits and their fans. [“It all boils down to the songs, you know.  We’ve written some really good ones and we’ve been blessed a million times over with the songwriters here in Nashville and all over the world, really, writing great stuff.  So we’ve been just fortunate to be able to tell people’s stories and their life journeys through music.  So it all starts and ends with a great song and without that you really don’t have anything, so that’s where it all starts and ends. (Joe Don Rooney) And our fans, you know, our fans are incredible (absolutely).  They’re still with us every step of the way and it’s incredible to see some of the younger fans that’s grown up with us now, they’ve graduated college, moved on, have jobs, have families of their own, bringing out their kids now and it’s pretty incredible.”]

Tickets to the Farewell: Life Is A Highway Tour will be available in the coming weeks.
