The View From Here – Made With Love
January 24, 2022 12:06 pmOh the weather outside is frightful, but the smells in my kitchen are delightful! Okay, maybe that was cheesy. But I don’t care. It’s snowing and blowing, windy and cold – making for a perfect comfort food, homemade soup kinda day. I decided today it would be vegetable soup.
I remember having vegetable soup as a kid. The Campbells soup stuff. I remember looking for letters. And as picky as I was as a kid, I never questioned the ingredients in the veggie soup. It tasted good and we gobbled it up.
My mom used to say stuff like “made with love” so that’s my only goal in the kitchen. Heaven knows I’m not the most skilled cook, but I try. And aim to make everything with love. And sometimes a side of frustration.
I used to make soup with the boxed veggie broth until someone shared with me how easy it is to keep clippings from your veggies and save them in a freezer bag so I do that now and when the bag gets full, I throw the frozen veggie ends in a pot, add some water and let it simmer for hours to get the most flavour. So whenever you cut up some veggies for snacking – keep the stems and peels and throw them in a baggy in the freezer and forget about them.
Today I pulled out that bag of veggie ends and I’m making the soup. I add potato and carrots and whatever else I might have in the freezer. I’ll get fancy and make a loaf of bread in the bread maker I found on clearance late last year.
Comfort food.
Which just so happens to be pretty good for you too. Because of all those veggies and all that love. (smile)

It sure doesn’t look pretty at the beginning, but it sure hits the spot at the end of the day.
