The View From Here – Comfort Food For The Win
January 14, 2025 1:29 pmI feel like my 50’s are turning out to be my “I don’t want to” era.
Is this what happens to us as we get older? Do we somehow turn into toddlers throwing temper tantrums over things we no longer want to do as adults? Paying bills. Budgeting. Trying to find sales on all the things at the grocery store because who wants to pay full price for anything right now.
I don’t want to exercise every day. I don’t want to eat vegetables every day even if I know it’s better for me. And if you saw what I ate yesterday in pure defiance you would understand how reckless I can be. (smile) I don’t want to spend every weekend cleaning the house from the week. Seriously. What is even the point when we just keep making a mess?
I don’t want to come up with dinner ideas every single night. I don’t want my dad to get older. I don’t want to let my kids go even if I know I have to because that’s what you do as a parent when they get older. That one is extra hard. Letting kids go away to school or across the country is HARD. So yeah, I’m in my “I don’t want to” era right now. Digging in my heels. (smile)
I don’t know about you – but when I have these days where life feels hard and full of “I don’t want to!” I reach for comfort food the most.
The stuff that memories are made of. Those old recipes that have been passed down through the family. The foods that remind you of simpler days and times.
This weekend I made some chicken noodle soup and tea biscuits. Both suprisingly easy to make and super tasty. The soup is a whole new experience for me in the last few years that I have been learning more and more about nutrition and food that is better for you, I’ve started making som
e new things.
When you get a chicken from the grocery store – keep those bones! Throw them in the freezer so you can make soup another day.
That’s what I did this weekend – I threw them in a pot with some water and let it simmer all afternoon.
The tea biscuits were from an old Five Roses cookbook from my mom. Super easy to make and super yummy.

And for those that want to make it – sharing an easy chicken noodle soup recipe I found online. It goes so well with the tea biscuits.
1. Classic Chicken Noodle Soup
Ingredients:
1 tbsp olive oil
1 onion, diced
2 carrots, sliced
2 celery stalks, sliced
3 garlic cloves, minced
8 cups chicken broth
2 cups shredded cooked chicken
2 cups egg noodles
1 tsp dried thyme
Salt and pepper to taste
Instructions:
Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery until softened (5-7 minutes).
Add garlic and thyme, cooking for 1 more minute.
Pour in chicken broth and bring to a boil.
Add noodles and cook until tender (7-8 minutes).
Stir in chicken, season with salt and pepper, and simmer for 5 minutes. Serve hot.
